Eggnog is my absolute favourite around the Christmas season! I can’t help nozzle down an entire 1-litre carton in a matter of one or two days.
It’s thick and creamy and the perfect festive indulgence. But it’s also loaded with sugar, milk and calories.
For those looking to stick with their healthy eating regimen over the Christmas Holidays, health and fitness expert, Amanda Russell has a great recipe for low-calorie eggnog.
I gave her recipe a try and it actually turned out quite well, so I thought I’d pass it onto my readers as well.
- 1 3/4 cup Blue Diamond, Almond Breeze, Almond Milk (unsweetened Vanilla flavoured)
- 1/3 cup eggbeaters
- 1 tbsp white sugar
- 1/2 tsp brown sugar
Pour almond milk into a saucepan and stir on low heat. In a separate pan put the eggbeaters, white sugar and brown sugar together on low heat and stir constantly.
Once the egg mixture is nice and thick, add it to the almond milk. Keep stirring constantly. The more you stir, the better the mixture.
Put it in the fridge for a few hours. Garnish as you like (whipped cream, cinnamon stick or nutmeg).
